- 8-10 taco shells

Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook, stirring occasionally, until softened, about 3 minutes.
- Add the minced garlic and cook, stirring constantly, for an additional 30 seconds.
- Add the ground bison meat and cook, breaking it up into small pieces with a wooden spoon or spatula, until browned.
- In a small bowl, combine the chilli powder, cumin, paprika, salt, and black pepper. Add the spice mixture to the skillet.
- Stir after adding the water to the skillet. Once the liquid has decreased and the meat is covered in the spices, bring the mixture to a simmer and cook it for 5-7 minutes.
- Heat the taco shells in the oven per the directions on the package while the meat cooks.
- Spoon the bison meat into each taco shell to create the tacos. Add cherry tomatoes, chopped cilantro, and diced avocado on top. Before serving, squeeze a lime wedge over each taco.
