Ingredients:

  • 1 small seedless watermelon (cut into 1-inch cubes)
  • 8 oz (225g) block feta cheese (cut into 1-inch cubes)
  • 1/4 cup (60ml) balsamic glaze
  • 12 fresh mint leaves
  • 1/4 tsp (1.5g) flaky sea salt
  • 1/4 tsp (1.5g) freshly cracked black pepper

Instructions:

  1. Slice the watermelon into thick planks, then cut those into uniform 1-inch squares. Gently pat the cubes with a paper towel to remove excess surface moisture.
  2. Slide a toothpick through one cube of feta, followed by a fresh mint leaf folded in half, and finally a cube of watermelon, pressing them firmly together.
  3. Arrange the skewers on a platter. Drizzle the balsamic glaze in a zig-zag motion across the top and finish with a light sprinkle of flaky sea salt and cracked black pepper.
