Ingredients:

  • 6 cups seedless watermelon, cubed into 1-inch pieces
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh basil leaves, torn by hand
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1/4 tsp sea salt
  • 1/8 tsp cracked black pepper

Instructions:

  1. Cube chilled watermelon into uniform 1-inch pieces and place in a large bowl. Gently tear basil leaves by hand to prevent bruising.
  2. In a small mason jar, combine olive oil, lime juice, honey, salt, and pepper. Shake vigorously for 30 seconds until emulsified.
  3. Drizzle the dressing over watermelon cubes and toss gently. Fold in crumbled feta and torn basil 2-3 times to keep feta in distinct chunks.
