Ingredients:

  • 1.5 oz simple syrup (1:1 ratio)
  • 1 tsp pure vanilla extract
  • 1/8 tsp fresh lemon juice
  • 8 oz chilled sparkling mineral water
  • 1 cup large ice cubes
  • 1 tbsp heavy cream (optional)

Instructions:

  1. In the bottom of a tall highball or Collins glass, combine the 1.5 oz of simple syrup, 1 tsp of pure vanilla extract, and 1/8 tsp of fresh lemon juice.
  2. Stir the mixture with a bar spoon for 10 seconds until uniform and fragrant.
  3. Fill the glass to the brim with large ice cubes, ensuring the syrup base remains at the bottom.
  4. Slowly pour 8 oz of chilled sparkling mineral water over the ice. Add 1 tbsp of heavy cream if an Italian-style texture is desired.
  5. Give the drink one gentle lift with the bar spoon from the bottom to incorporate the vanilla base without losing carbonation.
