Ingredients:
- 1.5 oz simple syrup (1:1 ratio)
- 1 tsp pure vanilla extract
- 1/8 tsp fresh lemon juice
- 8 oz chilled sparkling mineral water
- 1 cup large ice cubes
- 1 tbsp heavy cream (optional)
Instructions:
- In the bottom of a tall highball or Collins glass, combine the 1.5 oz of simple syrup, 1 tsp of pure vanilla extract, and 1/8 tsp of fresh lemon juice.
- Stir the mixture with a bar spoon for 10 seconds until uniform and fragrant.
- Fill the glass to the brim with large ice cubes, ensuring the syrup base remains at the bottom.
- Slowly pour 8 oz of chilled sparkling mineral water over the ice. Add 1 tbsp of heavy cream if an Italian-style texture is desired.
- Give the drink one gentle lift with the bar spoon from the bottom to incorporate the vanilla base without losing carbonation.
