Ingredients:

  • 2 tbsp Celery Salt
  • 1 tbsp Sweet Paprika
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Black Pepper
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1/4 tsp Ground Mace
  • 1/4 tsp Ground Ginger
  • 1/4 tsp Ground Cardamom
  • 1/4 tsp Ground Allspice
  • 1/8 tsp Ground Cloves
  • 1/8 tsp Ground Nutmeg
  • 1/8 tsp Ground Cinnamon
  • 2 Bay Leaves

Instructions:

  1. Tear the 2 Bay Leaves into small pieces. This helps the grinder blades catch the leaves more effectively.
  2. Place the bay leaf pieces into a spice grinder and pulse until they become a fine, powdery dust.
  3. In a small bowl, whisk together the 2 tbsp Celery Salt, 1 tbsp Sweet Paprika, and 1 tsp Smoked Paprika.
  4. Stir in the 1 tsp Ground Black Pepper, 1/2 tsp Cayenne Pepper, and 1/2 tsp Crushed Red Pepper Flakes.
  5. Add the 1/4 tsp Ground Mace, 1/4 tsp Ground Ginger, 1/4 tsp Ground Cardamom, and 1/4 tsp Ground Allspice.
  6. Whisk in the 1/8 tsp Ground Cloves, 1/8 tsp Ground Nutmeg, and 1/8 tsp Ground Cinnamon.
  7. Pour the entire mixture through a fine mesh sieve into a clean bowl. This removes any unground bay leaf stems or clumps of paprika.
  8. Stir the sifted mixture one last time until the color is a uniform, rusty orange.
  9. Transfer the mix to an airtight glass jar.
  10. Wait 24 hours before using until the scents have fully merged and mellowed.
