Ingredients:
- 3 tbsp oat flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp plain Greek yogurt
- 1.5 tbsp pure maple syrup
- 1/4 tsp baking powder
- 1 pinch sea salt
- 1/4 tsp vanilla extract
- 1 tbsp water
- 1 tsp dark chocolate chips
Instructions:
- Find a 10oz or 12oz microwave safe mug.
- Whisk together 3 tbsp oat flour, 2 tbsp cocoa powder, 1/4 tsp baking powder, and a pinch of sea salt. Mix until no clumps remain.
- Measure out 2 tbsp Greek yogurt, 1.5 tbsp maple syrup, 1/4 tsp vanilla extract, and 1 tbsp water.
- Add the wet ingredients into the dry mixture in the mug.
- Stir vigorously with a fork until the batter is smooth and glossy. It should look like thick chocolate pudding.
- Push 1 tsp dark chocolate chips into the very center of the batter. Don't stir them in; let them sit in the middle for a molten core.
- Place the mug in the center of the microwave.
- Cook on high for 60 seconds until the top looks set but still slightly tacky.
- Remove carefully (the mug will be hot!) and let it sit for 1 minute before eating.
