Ingredients:

  • 3 tbsp oat flour
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp plain Greek yogurt
  • 1.5 tbsp pure maple syrup
  • 1/4 tsp baking powder
  • 1 pinch sea salt
  • 1/4 tsp vanilla extract
  • 1 tbsp water
  • 1 tsp dark chocolate chips

Instructions:

  1. Find a 10oz or 12oz microwave safe mug.
  2. Whisk together 3 tbsp oat flour, 2 tbsp cocoa powder, 1/4 tsp baking powder, and a pinch of sea salt. Mix until no clumps remain.
  3. Measure out 2 tbsp Greek yogurt, 1.5 tbsp maple syrup, 1/4 tsp vanilla extract, and 1 tbsp water.
  4. Add the wet ingredients into the dry mixture in the mug.
  5. Stir vigorously with a fork until the batter is smooth and glossy. It should look like thick chocolate pudding.
  6. Push 1 tsp dark chocolate chips into the very center of the batter. Don't stir them in; let them sit in the middle for a molten core.
  7. Place the mug in the center of the microwave.
  8. Cook on high for 60 seconds until the top looks set but still slightly tacky.
  9. Remove carefully (the mug will be hot!) and let it sit for 1 minute before eating.
