Ingredients:

  • 6 cups seedless watermelon, cubed into 1-inch pieces
  • 1/2 cup red onion, thinly sliced into half-moons
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil or mint leaves, chiffonade
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1 tbsp fresh lime juice
  • 1/4 tsp sea salt
  • 1/8 tsp cracked black pepper

Instructions:

  1. Place the sliced red onions in a small bowl. Pour over the lime juice and a pinch of salt. Let sit for 5–10 minutes to flash-pickle the onions.
  2. In a large mixing bowl, combine the cubed watermelon and the marinated red onions, tossing gently to distribute evenly.
  3. In a separate small container, whisk together the olive oil, balsamic glaze, and black pepper until smooth and glossy.
  4. Drizzle the balsamic dressing over the watermelon. Gently fold in the crumbled feta and fresh basil using a spatula to avoid crushing the cheese.
