Ingredients:
- 6 cups seedless watermelon, cubed into 1-inch pieces
- 1/2 cup red onion, thinly sliced into half-moons
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil or mint leaves, chiffonade
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze
- 1 tbsp fresh lime juice
- 1/4 tsp sea salt
- 1/8 tsp cracked black pepper
Instructions:
- Place the sliced red onions in a small bowl. Pour over the lime juice and a pinch of salt. Let sit for 5–10 minutes to flash-pickle the onions.
- In a large mixing bowl, combine the cubed watermelon and the marinated red onions, tossing gently to distribute evenly.
- In a separate small container, whisk together the olive oil, balsamic glaze, and black pepper until smooth and glossy.
- Drizzle the balsamic dressing over the watermelon. Gently fold in the crumbled feta and fresh basil using a spatula to avoid crushing the cheese.
