Ingredients:

  • 4 cups freshly strained watermelon juice
  • 1.5 cups granulated sugar
  • 1 tbsp lemon juice
  • 1 pouch (1.75 oz) powdered fruit pectin

Instructions:

  1. Blend fresh watermelon chunks until liquid, then pass the mixture through a fine-mesh strainer. Measure out exactly 4 cups of the clear liquid, discarding the pulp.
  2. Combine the strained juice and powdered pectin in a large heavy-bottomed pot. Bring the mixture to a rolling boil over high heat, stirring constantly.
  3. Whisk in the granulated sugar and lemon juice. Return the mixture to a full, rolling boil that cannot be stirred down until a digital candy thermometer hits 220°F (104°C).
  4. Remove from heat and skim off any foam from the surface with a spoon.
  5. Carefully pour the hot jelly into sterilized half-pint Mason jars, leaving 1/4 inch of headspace. Seal immediately and let cool undisturbed for 2 hours to set.
