Ingredients:

  • 1.5 lbs boneless skinless chicken thighs
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tsp smoked paprika
  • 1 cup sharp cheddar cheese, freshly shredded
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic, microplaned
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes

Instructions:

  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs completely dry with paper towels to ensure a crispy crust.
  2. Season both sides of the chicken thighs with sea salt, cracked black pepper, and smoked paprika.
  3. In a small mixing bowl, whisk together the heavy cream, microplaned garlic, and dried oregano.
  4. Place the chicken in your baking dish or skillet. Pour the cream mixture around and slightly over the chicken.
  5. In a separate bowl, mix the shredded cheddar and Parmesan cheese. Mound the cheese mixture onto the center of each thigh, pressing down slightly to adhere.
  6. Bake for 20 minutes, or until the cheese has formed a golden-brown crust and the internal temperature of the chicken reaches 165°F (74°C).
  7. Garnish with red pepper flakes before serving.
