Ingredients:
- 1/3 cup (60g) small sago pearls
- 4 cups (950ml) water
- 1 cup (240ml) evaporated milk
- 1/2 cup (150g) sweetened condensed milk
- 1/2 cup (120ml) coconut milk
- 1/4 tsp (1.5g) salt
- 3 cups (450g) ripe cantaloupe
Instructions:
- Bring 4 cups (950ml) of water to a rolling boil. Stir in the sago pearls and boil for 10–12 minutes. Lower the heat and let them simmer until the pearls are almost completely translucent, with only a tiny white dot remaining in the center.
- Immediately drain the pearls through a fine-mesh strainer and rinse them under cold running water to remove excess surface starch.
- In a large bowl, whisk together the evaporated milk, condensed milk, coconut milk, and salt until the mixture is smooth and the condensed milk is fully integrated.
- Gently fold the chilled sago pearls and the cantaloupe balls into the milk mixture.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld and the dessert to reach a refreshing temperature.
