Ingredients:

  • 1/3 cup (60g) small sago pearls
  • 4 cups (950ml) water
  • 1 cup (240ml) evaporated milk
  • 1/2 cup (150g) sweetened condensed milk
  • 1/2 cup (120ml) coconut milk
  • 1/4 tsp (1.5g) salt
  • 3 cups (450g) ripe cantaloupe

Instructions:

  1. Bring 4 cups (950ml) of water to a rolling boil. Stir in the sago pearls and boil for 10–12 minutes. Lower the heat and let them simmer until the pearls are almost completely translucent, with only a tiny white dot remaining in the center.
  2. Immediately drain the pearls through a fine-mesh strainer and rinse them under cold running water to remove excess surface starch.
  3. In a large bowl, whisk together the evaporated milk, condensed milk, coconut milk, and salt until the mixture is smooth and the condensed milk is fully integrated.
  4. Gently fold the chilled sago pearls and the cantaloupe balls into the milk mixture.
  5. Cover and refrigerate for at least 1 hour to allow the flavors to meld and the dessert to reach a refreshing temperature.
