Ingredients:
- 3 large overripe bananas (approx. 340g)
- 0.5 cup unsweetened applesauce (125g)
- 1 large egg
- 1 tsp pure vanilla extract
- 0.5 cup coconut sugar (100g)
- 1.5 cups all-purpose flour (190g)
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp sea salt
- 1 tsp ground cinnamon
- 0.25 tsp ground nutmeg
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or 8-inch square cake tin.
- In a large mixing bowl, mash the overripe bananas until mostly liquid. Whisk in the applesauce, egg, vanilla extract, and coconut sugar until the mixture is cohesive and slightly bubbly.
- In a separate smaller bowl, whisk together the flour, baking soda, baking powder, sea salt, cinnamon, and nutmeg to ensure even distribution and no clumps.
- Gradually add the dry ingredients to the wet banana mixture. Using a silicone spatula, gently fold the ingredients together by cutting through the center and lifting over just until no white streaks of flour remain. Do not overmix.
- Pour the batter into the prepared pan. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
- Transfer the pan to a wire cooling rack and allow the cake to cool completely before slicing to let the structure set.
