Ingredients:

  • 3 large overripe bananas (approx. 340g)
  • 0.5 cup unsweetened applesauce (125g)
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 0.5 cup coconut sugar (100g)
  • 1.5 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp sea salt
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or 8-inch square cake tin.
  2. In a large mixing bowl, mash the overripe bananas until mostly liquid. Whisk in the applesauce, egg, vanilla extract, and coconut sugar until the mixture is cohesive and slightly bubbly.
  3. In a separate smaller bowl, whisk together the flour, baking soda, baking powder, sea salt, cinnamon, and nutmeg to ensure even distribution and no clumps.
  4. Gradually add the dry ingredients to the wet banana mixture. Using a silicone spatula, gently fold the ingredients together by cutting through the center and lifting over just until no white streaks of flour remain. Do not overmix.
  5. Pour the batter into the prepared pan. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  6. Transfer the pan to a wire cooling rack and allow the cake to cool completely before slicing to let the structure set.
