Ingredients:

  • 2 cups (300g) watermelon rind, green skin removed and diced into 1-inch cubes
  • 2 tbsp (30ml) extra virgin olive oil
  • 1/2 tsp (3g) Kosher salt
  • 1/4 tsp (1g) cracked black pepper
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tsp (2g) garlic powder
  • 1/2 tsp (1g) smoked paprika
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Use a vegetable peeler to remove the hard, dark green outer skin from the watermelon rind, then dice the remaining white/pale green flesh into uniform 1-inch cubes.
  2. In a large mixing bowl, combine the diced rind with olive oil, salt, and black pepper. Toss thoroughly until every cube is glistening.
  3. Sprinkle in the garlic powder, smoked paprika, and Parmesan cheese, stirring gently to ensure the cheese adheres to the oil without clumping.
  4. Spread the seasoned rinds in a single layer on a parchment-lined baking sheet, ensuring no pieces are touching.
  5. Bake at 400°F (200°C) for 45 minutes, rotating the pan and tossing the rinds every 15 minutes for an even brown finish.
  6. Remove from the oven when edges are browned and the center is bite-tender, then drizzle with fresh lemon juice immediately.
