- 2 cups (300g) watermelon rind, green skin removed and diced into 1-inch cubes
- 2 tbsp (30ml) extra virgin olive oil
- 1/2 tsp (3g) Kosher salt
- 1/4 tsp (1g) cracked black pepper
- 1/4 cup (25g) grated Parmesan cheese
- 1 tsp (2g) garlic powder
- 1/2 tsp (1g) smoked paprika
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Use a vegetable peeler to remove the hard, dark green outer skin from the watermelon rind, then dice the remaining white/pale green flesh into uniform 1-inch cubes.
- In a large mixing bowl, combine the diced rind with olive oil, salt, and black pepper. Toss thoroughly until every cube is glistening.
- Sprinkle in the garlic powder, smoked paprika, and Parmesan cheese, stirring gently to ensure the cheese adheres to the oil without clumping.
- Spread the seasoned rinds in a single layer on a parchment-lined baking sheet, ensuring no pieces are touching.
- Bake at 400°F (200°C) for 45 minutes, rotating the pan and tossing the rinds every 15 minutes for an even brown finish.
- Remove from the oven when edges are browned and the center is bite-tender, then drizzle with fresh lemon juice immediately.
