Ingredients:

  • 2 cups (300g) seedless watermelon, cubed
  • 2 cups (300g) honeydew melon, cubed
  • 2 cups (300g) cantaloupe, cubed
  • 1/2 cup (15g) fresh mint leaves, torn
  • 1/4 cup (30g) feta cheese, crumbled
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lime juice
  • 1 tbsp (15ml) honey
  • 1 tsp (5ml) lime zest
  • 1/4 tsp (1.5g) sea salt
  • 1 small serrano pepper, finely minced
  • 1 tbsp (15ml) balsamic glaze
  • 2 tbsp (20g) toasted pepitas

Instructions:

  1. Cube the watermelon, honeydew, and cantaloupe into uniform 1-inch pieces and place them in a large mixing bowl.
  2. In a small jar or bowl, combine the olive oil, lime juice, honey, lime zest, and minced serrano. Shake or whisk vigorously until the mixture is opaque and slightly thickened.
  3. Pour the dressing over the melon and toss gently with a silicone spatula to avoid bruising the fruit.
  4. Fold in the torn mint leaves and crumbled feta cheese.
  5. Finish by drizzling with balsamic glaze and sprinkling with toasted pepitas for added crunch.
