Ingredients:
- 6 cups seedless watermelon, cubed into 1-inch pieces
- 1/2 tsp flaky sea salt
- 1 large lime, zested and juiced
- 2 tbsp fresh mint leaves, chiffonade
Instructions:
- Slice the watermelon into thick rounds, remove the rind, and cut the flesh into uniform 1-inch cubes.
- Zest the lime directly into a small bowl, then squeeze the juice over the zest and stir in the thinly sliced mint.
- Place the watermelon cubes in a large mixing bowl, drizzle the lime-mint mixture over the top, and sprinkle with sea salt.
- Gently fold the fruit using a spatula or large spoon until the surfaces are glistening and coated.
