Ingredients:
- 600g seedless watermelon, cubed into 1-inch pieces
- 225g chilled goat cheese log
- 60ml balsamic glaze
- 15 fresh mint leaves, chiffonade or torn
- 5g flaky sea salt
- 1g freshly cracked black pepper
Instructions:
- Slice the chilled watermelon into uniform 1-inch cubes and pat the cubes dry with a paper towel to remove excess surface moisture.
- Slice the chilled goat cheese log into rounds of equal thickness to the watermelon cubes.
- Thread a toothpick through a mint leaf, a slice of goat cheese, and a watermelon cube, pressing firmly so the cheese adheres to the fruit.
- Arrange the skewers on a chilled platter and drizzle with balsamic glaze in a zig-zag pattern.
- Sprinkle with flaky sea salt and cracked black pepper immediately before serving.
