Ingredients:

  • 600g seedless watermelon, cubed into 1-inch pieces
  • 225g chilled goat cheese log
  • 60ml balsamic glaze
  • 15 fresh mint leaves, chiffonade or torn
  • 5g flaky sea salt
  • 1g freshly cracked black pepper

Instructions:

  1. Slice the chilled watermelon into uniform 1-inch cubes and pat the cubes dry with a paper towel to remove excess surface moisture.
  2. Slice the chilled goat cheese log into rounds of equal thickness to the watermelon cubes.
  3. Thread a toothpick through a mint leaf, a slice of goat cheese, and a watermelon cube, pressing firmly so the cheese adheres to the fruit.
  4. Arrange the skewers on a chilled platter and drizzle with balsamic glaze in a zig-zag pattern.
  5. Sprinkle with flaky sea salt and cracked black pepper immediately before serving.
