Ingredients:

  • 4 cups seedless watermelon, cubed and chilled
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest, finely grated
  • 1 tbsp honey
  • 1 pinch fine sea salt
  • 10 blueberries
  • 10 small mint leaves

Instructions:

  1. Cut chilled watermelon into 1-inch chunks, ensuring all black seeds are removed.
  2. Place the watermelon cubes, lime juice, lime zest, honey, and salt into a high-speed blender.
  3. Blend on high for 30-60 seconds until the mixture is completely smooth and slightly frothy.
  4. Taste the puree; if the watermelon is not naturally sweet, add an extra teaspoon of honey.
  5. Drop one blueberry and one mint leaf into the bottom of each popsicle mold.
  6. Pour the watermelon mixture into the molds, leaving 1/4 inch of headspace at the top for expansion.
  7. Insert popsicle sticks and freeze for at least 6 hours or overnight until solid.
