Ingredients:
- 4 cups seedless watermelon, cubed and chilled
- 1 tbsp fresh lime juice
- 1 tsp lime zest, finely grated
- 1 tbsp honey
- 1 pinch fine sea salt
- 10 blueberries
- 10 small mint leaves
Instructions:
- Cut chilled watermelon into 1-inch chunks, ensuring all black seeds are removed.
- Place the watermelon cubes, lime juice, lime zest, honey, and salt into a high-speed blender.
- Blend on high for 30-60 seconds until the mixture is completely smooth and slightly frothy.
- Taste the puree; if the watermelon is not naturally sweet, add an extra teaspoon of honey.
- Drop one blueberry and one mint leaf into the bottom of each popsicle mold.
- Pour the watermelon mixture into the molds, leaving 1/4 inch of headspace at the top for expansion.
- Insert popsicle sticks and freeze for at least 6 hours or overnight until solid.
