Ingredients:

  • 6 cups (880g) seedless watermelon, cubed into 1-inch pieces
  • 2 medium (300g) ripe avocados, cubed
  • 1/2 cup (60g) reduced-sodium feta cheese, crumbled
  • 1/4 cup (40g) red onion, thinly sliced into half-moons
  • 1/4 cup (15g) fresh mint leaves, torn
  • 1/4 cup (15g) fresh cilantro or flat-leaf parsley, chopped
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp (5ml) lime zest
  • 1 tsp (5ml) honey or maple syrup
  • 1/4 tsp (1.5g) sea salt
  • 1/4 tsp (1.5g) cracked black pepper

Instructions:

  1. Cut the watermelon and avocado into uniform 1-inch cubes. Slice the red onion paper-thin. Place ingredients in a large bowl, keeping the avocado on top to prevent premature mashing.
  2. In a small jar, combine the olive oil, lime juice, zest, honey, salt, and pepper. Shake vigorously or whisk until the mixture is opaque and thickened.
  3. Drizzle the dressing over the watermelon and red onion first and toss lightly.
  4. Gently fold in the cubed avocado and crumbled feta using a silicone spatula or large spoon.
  5. Scatter the torn mint and cilantro over the top and toss one final time until combined.
