Ingredients:
- 6 cups (880g) seedless watermelon, cubed into 1-inch pieces
- 2 medium (300g) ripe avocados, cubed
- 1/2 cup (60g) reduced-sodium feta cheese, crumbled
- 1/4 cup (40g) red onion, thinly sliced into half-moons
- 1/4 cup (15g) fresh mint leaves, torn
- 1/4 cup (15g) fresh cilantro or flat-leaf parsley, chopped
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (5ml) lime zest
- 1 tsp (5ml) honey or maple syrup
- 1/4 tsp (1.5g) sea salt
- 1/4 tsp (1.5g) cracked black pepper
Instructions:
- Cut the watermelon and avocado into uniform 1-inch cubes. Slice the red onion paper-thin. Place ingredients in a large bowl, keeping the avocado on top to prevent premature mashing.
- In a small jar, combine the olive oil, lime juice, zest, honey, salt, and pepper. Shake vigorously or whisk until the mixture is opaque and thickened.
- Drizzle the dressing over the watermelon and red onion first and toss lightly.
- Gently fold in the cubed avocado and crumbled feta using a silicone spatula or large spoon.
- Scatter the torn mint and cilantro over the top and toss one final time until combined.
