Ingredients:
- 2 cups whole milk
- 2 tbsp unsweetened Dutch-processed cocoa powder
- 2 oz dark chocolate (60% cacao or higher), finely chopped
- 1 tbsp honey
- 1/4 tsp espresso powder
- 1 pinch sea salt
- 3 oz Baileys Original Irish Cream
- 1 oz aged Irish Whiskey
- 1/2 cup heavy whipping cream, chilled
- 1 tbsp Irish cream liqueur (for the topping)
- 1 tsp dark chocolate shavings
Instructions:
- In a small heavy-bottomed saucepan, whisk together the cocoa powder, espresso powder, salt, and honey with 1/4 cup of the milk until a smooth, lump-free paste forms.
- Gradually pour in the remaining milk while whisking constantly. Place over medium-low heat until steaming and small bubbles form (approx. 160°F/82°C), but do not boil.
- Whisk in the finely chopped dark chocolate and continue stirring for 2 minutes until fully melted and glossy.
- Remove the saucepan from the heat. Stir in the 3 oz of Baileys and 1 oz of Irish whiskey to prevent curdling.
- In a chilled bowl, whisk the heavy whipping cream and 1 tbsp of Irish cream liqueur until soft peaks form.
- Pour the hot chocolate into two large mugs, top with the infused whipped cream and dark chocolate shavings.
