Ingredients:

  • 4 tbsp all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp coconut sugar
  • 1/4 tsp baking powder
  • 1 pinch salt
  • 3 tbsp unsweetened almond milk
  • 1 tbsp avocado oil
  • 1/4 tsp pure vanilla extract
  • 1 tbsp vegan dark chocolate chips

Instructions:

  1. Whisk the flour, cocoa powder, sugar, baking powder, and salt directly in a 12 oz microwave-safe ceramic mug until no large clumps remain.
  2. Pour in the almond milk, oil, and vanilla extract. Stir with a fork until the batter is smooth and glossy.
  3. Fold in half of the vegan chocolate chips into the batter and sprinkle the remaining chips on the surface.
  4. Place the mug in the center of the microwave and heat on high power for 70 to 90 seconds. Stop when the cake has risen but the center still looks slightly tacky.
  5. Allow the cake to rest undisturbed for 1 minute to let the starches set and the chocolate chips melt completely via residual heat.
