Ingredients:
- 6 cups (850g) seedless watermelon, cubed and frozen
- 2 tbsp (30ml) fresh lime juice
- 1 tbsp (15g) honey
- 1/2 cup (120ml) cold water
Instructions:
- Line a baking sheet with parchment paper.
- Spread the watermelon cubes in a single layer, making sure they don't touch.
- Freeze for at least 4 hours until the cubes are hard and frosty.
- Pour the lime juice and honey into the blender first. Note: Adding liquids first prevents the blades from jamming.
- Add the frozen watermelon cubes on top of the liquids.
- Start the blender on the lowest setting.
- Gradually increase to high and blend for 30-60 seconds until it looks like soft serve ice cream.
- Stop the blender and scrape down the sides with a spatula.
- Add cold water one tablespoon at a time if it's too thick.
- Pulse for 5 seconds until the texture is velvety and uniform.
