Ingredients:

  • 6 cups (850g) seedless watermelon, cubed and frozen
  • 2 tbsp (30ml) fresh lime juice
  • 1 tbsp (15g) honey
  • 1/2 cup (120ml) cold water

Instructions:

  1. Line a baking sheet with parchment paper.
  2. Spread the watermelon cubes in a single layer, making sure they don't touch.
  3. Freeze for at least 4 hours until the cubes are hard and frosty.
  4. Pour the lime juice and honey into the blender first. Note: Adding liquids first prevents the blades from jamming.
  5. Add the frozen watermelon cubes on top of the liquids.
  6. Start the blender on the lowest setting.
  7. Gradually increase to high and blend for 30-60 seconds until it looks like soft serve ice cream.
  8. Stop the blender and scrape down the sides with a spatula.
  9. Add cold water one tablespoon at a time if it's too thick.
  10. Pulse for 5 seconds until the texture is velvety and uniform.
