Ingredients:
- 1/2 cup (120g) plain Greek yogurt
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (5g) matcha powder
- 1 tbsp (15ml) honey
- 2 cups (300g) seedless watermelon, cubed and chilled
- 1/2 cup (120g) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) honey
- 16 mini semi-sweet chocolate chips
- 4 fresh mint leaves
Instructions:
- Whisk together the Greek yogurt, lime juice, honey, and matcha powder in a small bowl or blender until the mixture is a uniform, pale green color with no clumps.
- Spoon approximately 2 tablespoons of the green mixture into the bottom of each clear glass cup, smoothing the top with the back of a spoon.
- Puree the chilled watermelon cubes in a blender until completely smooth.
- Add the second portion of Greek yogurt, vanilla extract, and honey to the watermelon puree; blend on low for 10 seconds until incorporated.
- Carefully pour the red mixture over the green layer, using the back of a spoon against the side of the glass to maintain clean lines.
- Gently press 3-4 mini chocolate chips into the red layer to mimic watermelon seeds.
- Refrigerate the cups for at least 1 hour to set the yogurt and intensify flavors.
- Top each cup with a single fresh mint leaf before serving.
