Ingredients:
- 6 cups (900g) seedless watermelon, cubed into 1-inch pieces
- 1 cup (150g) English cucumber, diced
- 1/4 cup (15g) red onion, very thinly sliced
- 1/4 cup (10g) fresh mint leaves, torn
- 6 oz (170g) feta cheese, crumbled
- 1/2 tsp (3g) flaky sea salt
- 1/4 tsp (1g) freshly cracked black pepper
- 2 tbsp (30ml) extra virgin olive oil
- 1 tbsp (15ml) fresh lime juice
- 2 tbsp (30ml) balsamic glaze
Instructions:
- Cube the watermelon into uniform 1-inch pieces and dice the cucumber to a similar size. Gently pat the watermelon cubes with a paper towel to remove excess surface moisture.
- In a small jar, combine the olive oil and lime juice. Shake vigorously until the mixture is opaque and unified.
- Place the watermelon, cucumber, and red onion in a large bowl. Pour the lime-oil emulsion over the top and toss gently. Carefully fold in the crumbled feta and torn mint leaves.
- Transfer the salad to a chilled platter. Drizzle the balsamic glaze in a zig-zag pattern across the top and finish with a sprinkle of flaky sea salt and black pepper.
