Ingredients:
- 6 cups (900g) seedless watermelon, cubed into 1-inch pieces
- 1 cup (150g) English cucumber, diced
- 1/4 cup (15g) red onion, thinly sliced into half-moons
- 1/4 cup (15g) fresh cilantro or mint, roughly chopped
- 2 tbsp (30ml) fresh lime juice
- 1 tbsp (15ml) extra virgin olive oil
- 1 tsp (5g) Tajin seasoning or smoked paprika
- 1/2 tsp (2.5g) red pepper flakes
- 1/4 tsp (1.5g) sea salt
- 1/2 cup (75g) feta cheese, crumbled
- 1 jalapeño, thinly sliced into rings
Instructions:
- Cube the watermelon and dice the cucumber. Place them in a large bowl and immediately chill in the refrigerator for 10 minutes to preserve structural integrity.
- In a small jar or bowl, whisk together the lime juice, olive oil, Tajin, red pepper flakes, and salt until the oil is fully integrated and the dressing looks glossy and opaque.
- Add the sliced red onion and jalapeño to the chilled fruit. Pour the dressing over the top and gently fold the ingredients together using a silicone spatula until thinly coated.
- Fold in the crumbled feta and chopped herbs. Give it one final, light stir before serving.
