Ingredients:

  • 1.5 lbs fresh broccoli heads
  • 2 tbsp avocado oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper
  • 1/3 cup finely grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1 tsp fresh lemon zest
  • 1/4 tsp red pepper flakes

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a large baking sheet with parchment paper. Wash and thoroughly dry the broccoli. Cut florets from the stem and slice any large florets in half lengthwise to create a flat surface.
  2. In a large mixing bowl, toss the broccoli with avocado oil, sea salt, black pepper, and garlic powder. Massage the oil into the florets to ensure an even, thin coating.
  3. Spread the broccoli onto the baking sheet in a single layer with the flat sides facing down. Roast for 12 minutes until the bottoms are deeply browned.
  4. Sprinkle the grated Parmesan cheese over the broccoli and return to the oven for 2-3 minutes until the cheese forms a crispy crust. Remove from oven and finish with lemon zest and optional red pepper flakes.
