Ingredients:
- 1.5 lbs fresh broccoli heads
- 2 tbsp avocado oil
- 1/2 tsp fine sea salt
- 1/4 tsp freshly cracked black pepper
- 1/3 cup finely grated Parmesan cheese
- 1/2 tsp garlic powder
- 1 tsp fresh lemon zest
- 1/4 tsp red pepper flakes
Instructions:
- Preheat your oven to 425°F (218°C) and line a large baking sheet with parchment paper. Wash and thoroughly dry the broccoli. Cut florets from the stem and slice any large florets in half lengthwise to create a flat surface.
- In a large mixing bowl, toss the broccoli with avocado oil, sea salt, black pepper, and garlic powder. Massage the oil into the florets to ensure an even, thin coating.
- Spread the broccoli onto the baking sheet in a single layer with the flat sides facing down. Roast for 12 minutes until the bottoms are deeply browned.
- Sprinkle the grated Parmesan cheese over the broccoli and return to the oven for 2-3 minutes until the cheese forms a crispy crust. Remove from oven and finish with lemon zest and optional red pepper flakes.
