Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 cup parmesan cheese, freshly grated
  • 1 tsp fresh lemon juice

Instructions:

  1. Trim the woody stem ends off each sprout, remove any yellowed outer leaves, and slice them in half vertically.
  2. In a large mixing bowl, combine the halved sprouts, olive oil, garlic powder, salt, pepper, and red pepper flakes. Toss thoroughly until every sprout is evenly coated.
  3. Preheat your oven to 400°F (200°C). Spread the sprouts onto a parchment-lined baking sheet, placing as many as possible cut-side down. Roast for 20 minutes.
  4. Remove the pan from the oven and sprinkle the grated Parmesan evenly over the top of the sprouts.
  5. Return to the oven for another 5 minutes, or until the cheese is melted, bubbling, and slightly browned.
  6. Remove from the oven and immediately drizzle with fresh lemon juice.
