Ingredients:

  • 1/2 cup (120ml) filtered water
  • 1/2 cup (100g) granulated white sugar
  • 1.5 tbsp dried culinary-grade lavender
  • 1/4 tsp pure vanilla extract
  • 1/2 cup (120ml) heavy whipping cream, cold
  • 1/4 cup (60ml) 2% milk, cold
  • 1 pinch fine sea salt

Instructions:

  1. In a small saucepan, combine 1/2 cup water, 1/2 cup sugar, and 1.5 tbsp dried lavender. Bring to a gentle simmer over medium heat until sugar is dissolved.
  2. Remove from heat immediately and let the mixture steep for exactly 10 minutes to avoid over-extraction.
  3. Strain the syrup through a fine-mesh sieve into a glass jar, discarding the lavender buds. Stir in 1/4 tsp vanilla extract and a pinch of salt. Let cool completely.
  4. In a small pitcher, combine 1/2 cup cold heavy whipping cream and 1/4 cup cold 2% milk.
  5. Add 2 tablespoons of the prepared lavender syrup to the cream mixture.
  6. Submerge a handheld frother just below the surface and pulse until the volume doubles and reaches a glossy, wet-paint consistency.
