Ingredients:
- 1 lb lean ground beef
- 2 large sweet potatoes, peeled and cubed into 1/2 inch pieces
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups low-fat cottage cheese
- 1 medium avocado, sliced or cubed
- 2 tbsp chopped fresh cilantro
- 3 tbsp honey
- 1 tsp Sriracha
Instructions:
- Preheat your oven to 400°F (200°C). Note: A hot oven is key for those charred edges.
- Toss the cubed sweet potatoes with olive oil, salt, and pepper in a bowl.
- Spread the potatoes in a single layer on a rimmed sheet pan. Roast for 15-20 minutes, tossing halfway through, until edges are charred and centers are tender.
- While the potatoes are in the oven, heat a skillet over medium high heat.
- Brown the lean ground beef. Note: Don't crowd the pan too much or the meat will steam instead of sear.
- Stir in the smoked paprika and garlic powder. Cook until the beef is mahogany colored and no grey juices remain.
- Divide the roasted sweet potatoes and seasoned beef evenly between four bowls.
- Place a generous scoop of chilled cottage cheese in the center of each bowl.
- Top with avocado slices and fresh cilantro.
- Whisk the honey and Sriracha together in a small bowl. Drizzle the hot honey mixture directly over the beef and cottage cheese.
