Ingredients:

  • 1 lb lean ground beef
  • 2 large sweet potatoes, peeled and cubed into 1/2 inch pieces
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups low-fat cottage cheese
  • 1 medium avocado, sliced or cubed
  • 2 tbsp chopped fresh cilantro
  • 3 tbsp honey
  • 1 tsp Sriracha

Instructions:

  1. Preheat your oven to 400°F (200°C). Note: A hot oven is key for those charred edges.
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper in a bowl.
  3. Spread the potatoes in a single layer on a rimmed sheet pan. Roast for 15-20 minutes, tossing halfway through, until edges are charred and centers are tender.
  4. While the potatoes are in the oven, heat a skillet over medium high heat.
  5. Brown the lean ground beef. Note: Don't crowd the pan too much or the meat will steam instead of sear.
  6. Stir in the smoked paprika and garlic powder. Cook until the beef is mahogany colored and no grey juices remain.
  7. Divide the roasted sweet potatoes and seasoned beef evenly between four bowls.
  8. Place a generous scoop of chilled cottage cheese in the center of each bowl.
  9. Top with avocado slices and fresh cilantro.
  10. Whisk the honey and Sriracha together in a small bowl. Drizzle the hot honey mixture directly over the beef and cottage cheese.
