Ingredients:

  • 8 high-quality black tea bags
  • 4 cups filtered water
  • 0.125 tsp baking soda
  • 4 cups fresh ice
  • 0.75 cup superfine sugar
  • 1 medium lemon, thinly sliced

Instructions:

  1. Bring 4 cups of filtered water to a boil in a saucepan.
  2. Drop the black tea bags and the baking soda into the boiling water and steep for exactly 5 minutes.
  3. Remove the tea bags gently without squeezing them to avoid releasing bitter tannins.
  4. Add the superfine sugar to the hot concentrate and stir vigorously until the granules are completely dissolved.
  5. Place 4 cups of ice into a large heat proof pitcher. Pour the hot tea concentrate directly over the ice. Add lemon slices for aromatics and serve immediately over additional ice.
