Ingredients:

  • 3 cups diced cantaloupe, 1/2-inch cubes
  • 1/4 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 cup all-purpose flour
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp granulated sugar

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the diced cantaloupe with the lemon juice and 1/4 cup of sugar. Let it sit for 5 minutes to allow a syrup to form.
  3. To the same bowl, add the melted butter, vanilla extract, cinnamon, and nutmeg.
  4. Stir in the flour and the remaining 2 tablespoons of sugar. Fold the mixture gently until the flour is moistened and the cantaloupe is evenly coated in a thick, pebbly batter.
  5. Transfer the mixture into a 9-inch square baking dish, smoothing the top with a spatula.
  6. Bake for 25 minutes until the edges are bubbling with fruit syrup and the top is a deep golden brown and firm to the touch.
