Ingredients:
- 3 cups diced cantaloupe, 1/2-inch cubes
- 1/4 cup granulated sugar
- 1 tbsp fresh lemon juice
- 1 cup all-purpose flour
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp granulated sugar
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the diced cantaloupe with the lemon juice and 1/4 cup of sugar. Let it sit for 5 minutes to allow a syrup to form.
- To the same bowl, add the melted butter, vanilla extract, cinnamon, and nutmeg.
- Stir in the flour and the remaining 2 tablespoons of sugar. Fold the mixture gently until the flour is moistened and the cantaloupe is evenly coated in a thick, pebbly batter.
- Transfer the mixture into a 9-inch square baking dish, smoothing the top with a spatula.
- Bake for 25 minutes until the edges are bubbling with fruit syrup and the top is a deep golden brown and firm to the touch.
