  • 1 cup (100g) Persian cucumbers, diced
  • 1/3 cup (40g) feta cheese, crumbled
  • 2 tbsp (8g) fresh mint leaves, torn or chiffonaded
  • 1 tbsp (15ml) extra-virgin olive oil
  • 1 tbsp (15ml) balsamic glaze
  • 1 tbsp (15ml) fresh lime juice
  • 1/4 tsp (1.5g) sea salt
  • 1 pinch (0.1g) cracked black pepper

Instructions:

  1. Cut the watermelon and Persian cucumbers into uniform 1-inch cubes to ensure a balanced distribution of flavors in every bite.
  2. In a small jar or bowl, combine the olive oil, balsamic glaze, lime juice, salt, and pepper. Whisk vigorously or shake until the dressing is glossy and cohesive.
  3. Place the watermelon and cucumbers in a large glass bowl. Drizzle the dressing over the top and toss gently using a folding motion to avoid bruising the fruit.
  4. Fold in the crumbled feta and fresh mint at the very last second to keep the feta intact and the mint vibrant.
