Ingredients:
- 5 lbs seedless watermelon
- 2 tbsp avocado oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 tbsp balsamic glaze
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 tbsp olive oil
Instructions:
- Trim 1 inch off both ends of the watermelon. Cut the melon in half, then slice each half into 1-inch thick rectangular steaks. Pat every side of the steaks with paper towels until completely dry.
- Lightly brush both sides of the watermelon steaks with avocado oil and sprinkle evenly with salt and black pepper.
- Preheat grill to high heat. Place steaks on the grates and grill for 3–5 minutes per side until deep mahogany-colored grill marks appear.
- During the final minute of grilling, brush the mixture of balsamic glaze, lime juice, garlic powder, smoked paprika, and olive oil over the top. Let bubble for 30–60 seconds, then remove from heat.
