Ingredients:

  • 2 tbsp honey
  • 1 tbsp fresh lime juice
  • 1/2 tsp lime zest
  • 1 pinch sea salt
  • 1 small cantaloupe, sliced into 1-inch thick wedges
  • 1 tbsp neutral oil

Instructions:

  1. Whisk honey, lime juice, zest, and salt in a small bowl. Mix until the honey is fully incorporated and the glaze is smooth.
  2. Slice the cantaloupe into 1 inch thick wedges. Leave the rind on so you have something to grip and to keep the fruit stable.
  3. Preheat the grill to medium high. Lightly oil the grates using a paper towel or brush to stop the fruit from sticking.
  4. Place the wedges directly on the heat.
  5. Grill 2–3 minutes per side until mahogany colored char marks appear.
  6. Use a pastry brush to coat each wedge with the honey lime mixture during the last 60 seconds of grilling.
  7. Watch for the glaze to bubble and thicken.
  8. Remove from the heat immediately once the syrup looks glossy.
