Ingredients:
- 2 tbsp honey
- 1 tbsp fresh lime juice
- 1/2 tsp lime zest
- 1 pinch sea salt
- 1 small cantaloupe, sliced into 1-inch thick wedges
- 1 tbsp neutral oil
Instructions:
- Whisk honey, lime juice, zest, and salt in a small bowl. Mix until the honey is fully incorporated and the glaze is smooth.
- Slice the cantaloupe into 1 inch thick wedges. Leave the rind on so you have something to grip and to keep the fruit stable.
- Preheat the grill to medium high. Lightly oil the grates using a paper towel or brush to stop the fruit from sticking.
- Place the wedges directly on the heat.
- Grill 2–3 minutes per side until mahogany colored char marks appear.
- Use a pastry brush to coat each wedge with the honey lime mixture during the last 60 seconds of grilling.
- Watch for the glaze to bubble and thicken.
- Remove from the heat immediately once the syrup looks glossy.
