Ingredients:

  • 12 large eggs
  • 1/2 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup diced yellow onion
  • 2 cups fresh spinach
  • 1 cup shredded sharp cheddar cheese
  • 1 tbsp vegetable oil

Instructions:

  1. Heat the vegetable oil in a skillet over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in the spinach until wilted and all excess liquid has evaporated.
  2. In a large mixing bowl, crack the 12 eggs. Add whole milk, salt, and black pepper. Whisk vigorously for 60 seconds until the mixture is a uniform pale yellow with no visible streaks of egg white.
  3. Grease a 9x13 inch baking dish. Spread the sautéed onions and spinach evenly across the bottom, then sprinkle the shredded sharp cheddar cheese over the vegetables.
  4. Pour the whisked egg mixture over the fillings. Bake at 350°F (175°C) for 20-25 minutes, or until the center is set and the edges are slightly mahogany-colored.
