Ingredients:
- 12 large eggs
- 1/2 cup whole milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup diced yellow onion
- 2 cups fresh spinach
- 1 cup shredded sharp cheddar cheese
- 1 tbsp vegetable oil
Instructions:
- Heat the vegetable oil in a skillet over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in the spinach until wilted and all excess liquid has evaporated.
- In a large mixing bowl, crack the 12 eggs. Add whole milk, salt, and black pepper. Whisk vigorously for 60 seconds until the mixture is a uniform pale yellow with no visible streaks of egg white.
- Grease a 9x13 inch baking dish. Spread the sautéed onions and spinach evenly across the bottom, then sprinkle the shredded sharp cheddar cheese over the vegetables.
- Pour the whisked egg mixture over the fillings. Bake at 350°F (175°C) for 20-25 minutes, or until the center is set and the edges are slightly mahogany-colored.
