Ingredients:

  • 6 cups (1.4kg) seedless watermelon, cubed
  • 2 tbsp (30ml) fresh lime juice
  • 2 tbsp (42g) honey
  • ½ tsp (2.5ml) vanilla extract
  • 8 small (10g) fresh mint leaves
  • 1 cup (150g) fresh blueberries

Instructions:

  1. Place the cubed watermelon, lime juice, honey, and vanilla extract into a high-speed blender.
  2. Process on high for 60–90 seconds until the mixture is completely liquefied and a frothy layer forms on top.
  3. Optional: Pour the mixture through a fine-mesh strainer to remove any remaining pulp for a velvety consistency.
  4. Divide the mixture evenly among the popsicle molds, leaving about ¼ inch (0.6cm) of space at the top to allow for expansion during freezing.
  5. If using garnish, drop one mint leaf and two blueberries into each mold.
  6. Insert the popsicle sticks firmly.
  7. Place the molds on a flat surface in the freezer and freeze for at least 6 hours, or overnight, until solid.
