Ingredients:

  • 6 cups seedless watermelon, cubed and chilled
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp honey
  • 1/4 tsp fine sea salt
  • 1 tbsp vodka

Instructions:

  1. Place the chilled watermelon cubes, lime juice, honey, and salt into a high-speed blender or food processor. Pulse until the mixture is completely liquefied.
  2. Pour the puree through a fine-mesh strainer into a bowl to remove any remaining fruit fibers for a professional, velvet-like consistency.
  3. Pour the strained mixture into a shallow freezer-safe container, spreading the liquid evenly. Place in the freezer for 90 minutes.
  4. Remove the container once the edges are slushy. Use a fork or hand mixer to vigorously stir the mixture, breaking up ice crystals. Repeat this process every 30 minutes for the next 2 hours.
  5. Smooth the top with a spatula and freeze for one final hour until it reaches a soft-serve consistency.
  6. Remove from the freezer 5 minutes before serving to allow for the perfect scoop.
