Ingredients:

  • 2 cups (300g) fresh strawberries, hulled and quartered
  • 1 cup (150g) fresh blueberries
  • 2 cups (300g) fresh pineapple, bite-sized chunks
  • 2 cups (300g) seedless green grapes, halved
  • 3 ripe kiwis, peeled and sliced into half-moons
  • 2 cups (300g) mango, cubed
  • 3 tbsp (45ml) fresh lime juice
  • 2 tbsp (30ml) honey
  • 1 tbsp (4g) fresh mint leaves, finely chiffonaded
  • ½ tsp (1g) lime zest

Instructions:

  1. Wash all fruit in cold water and pat dry.
  2. Chop the strawberries, pineapple, and mango into uniform ¾ inch pieces and place them in a large glass mixing bowl.
  3. In a small separate bowl, whisk together the lime juice, honey (or maple syrup), and lime zest vigorously until the mixture is glossy and translucent.
  4. Pour the citrus glaze over the prepared fruit.
  5. Add the chiffonaded mint leaves and gently fold the fruit from the bottom up using a silicone spatula until every piece is evenly coated.
