Ingredients:
- 2 cups (300g) fresh strawberries, hulled and quartered
- 1 cup (150g) fresh blueberries
- 2 cups (300g) fresh pineapple, bite-sized chunks
- 2 cups (300g) seedless green grapes, halved
- 3 ripe kiwis, peeled and sliced into half-moons
- 2 cups (300g) mango, cubed
- 3 tbsp (45ml) fresh lime juice
- 2 tbsp (30ml) honey
- 1 tbsp (4g) fresh mint leaves, finely chiffonaded
- ½ tsp (1g) lime zest
Instructions:
- Wash all fruit in cold water and pat dry.
- Chop the strawberries, pineapple, and mango into uniform ¾ inch pieces and place them in a large glass mixing bowl.
- In a small separate bowl, whisk together the lime juice, honey (or maple syrup), and lime zest vigorously until the mixture is glossy and translucent.
- Pour the citrus glaze over the prepared fruit.
- Add the chiffonaded mint leaves and gently fold the fruit from the bottom up using a silicone spatula until every piece is evenly coated.
