Ingredients:

  • 1 medium head Green Cabbage (900g), shredded thinly
  • 2 large Carrots (150g), grated or julienned
  • 0.25 cup Red Onion (40g), very finely minced
  • 1 cup Mayonnaise (230g)
  • 2 tablespoons Apple Cider Vinegar (30ml)
  • 1.5 tablespoons Granulated Sugar (20g)
  • 0.5 teaspoon Fine Sea Salt (3g)
  • 0.5 teaspoon Ground Black Pepper (1g)
  • 0.5 teaspoon Celery Seed (1g)

Instructions:

  1. Shred the cabbage into thin ribbons using a sharp knife or mandoline. Grate the carrots using the large holes of a box grater. Combine the cabbage, carrots, and minced onion in a large bowl. Toss them together until the colors are evenly distributed.
  2. In a separate medium bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, pepper, and celery seed. Whisk vigorously until the dressing is completely smooth and the sugar has mostly dissolved.
  3. Pour the creamy dressing over the vegetable mixture. Use large spoons or tongs to fold the dressing into the vegetables until every strand is well-coated. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
