Ingredients:
- 1 medium head Green Cabbage (900g), shredded thinly
- 2 large Carrots (150g), grated or julienned
- 0.25 cup Red Onion (40g), very finely minced
- 1 cup Mayonnaise (230g)
- 2 tablespoons Apple Cider Vinegar (30ml)
- 1.5 tablespoons Granulated Sugar (20g)
- 0.5 teaspoon Fine Sea Salt (3g)
- 0.5 teaspoon Ground Black Pepper (1g)
- 0.5 teaspoon Celery Seed (1g)
Instructions:
- Shred the cabbage into thin ribbons using a sharp knife or mandoline. Grate the carrots using the large holes of a box grater. Combine the cabbage, carrots, and minced onion in a large bowl. Toss them together until the colors are evenly distributed.
- In a separate medium bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, pepper, and celery seed. Whisk vigorously until the dressing is completely smooth and the sugar has mostly dissolved.
- Pour the creamy dressing over the vegetable mixture. Use large spoons or tongs to fold the dressing into the vegetables until every strand is well-coated. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
