Ingredients:

  • 6 cups (900g) seedless watermelon, cubed into 1-inch pieces
  • 2 cups (300g) English cucumber, quartered and sliced
  • 1/2 cup (50g) red onion, very thinly sliced half-moons
  • 1/2 cup (15g) fresh mint leaves, torn or chiffonade
  • 1/2 cup (60g) crumbled feta cheese
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) balsamic vinegar
  • 1 tbsp (15ml) fresh lime juice
  • 1 tsp (5ml) honey
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Cube the watermelon and slice the cucumbers into uniform pieces. Place both in a large mixing bowl.
  2. Add the thinly sliced red onions and torn mint leaves to the bowl. Toss gently by hand to distribute the herbs without bruising the fruit.
  3. In a small jar or bowl, combine the olive oil, balsamic vinegar, lime juice, and honey. Whisk vigorously or shake until the mixture is fully emulsified.
  4. Stir the sea salt and cracked black pepper into the dressing.
  5. Just before serving, drizzle the dressing over the produce and add the crumbled feta on top.
  6. Using a wide spatula, gently fold the ingredients from the bottom up until the fruit is glistening.
