- 2 tbsp extra virgin olive oil
- 0.75 tsp kosher salt
- 0.5 tsp cracked black pepper
- 3 tbsp pure maple syrup
- 3 cloves garlic, finely minced
- 1 tbsp balsamic vinegar
- 0.5 tsp smoked paprika
Instructions:
- Preheat your oven to 425°F (220°C) and place an empty large rimmed baking sheet inside to preheat. Note: A hot pan is the secret to an instant sear.
- In a large bowl, toss the trimmed Brussels sprouts and sliced carrots with extra virgin olive oil, salt, and black pepper until evenly coated.
- Carefully remove the hot baking sheet from the oven. Spread the vegetables onto the pan in a single layer, ensuring the flat side of the Brussels sprouts is in direct contact with the metal.
- Roast the vegetables for 18–20 minutes until the edges are browned and the interiors are tender.
- While the vegetables roast, whisk together the maple syrup, minced garlic, balsamic vinegar, and smoked paprika in a small mixing bowl to create the lacquer.
- Remove the pan from the oven, drizzle the maple garlic mixture over the vegetables, and toss well to coat.
- Return to the oven for a final 5–7 minutes until the glaze is bubbling and mahogany colored. The aroma at Step 6 is essentially the best part of the process.
