Instructions:
- Whisk the large egg into the blended cottage cheese until fully incorporated and smooth.
- Stir the garlic powder, onion powder, smoked paprika, and sea salt into the cottage cheese mixture to create the protein binder.
- In a separate shallow dredging bowl, combine the finely grated parmesan cheese, crushed pork rinds, black pepper, and dried parsley.
- Toss the chicken breast cubes in the cottage cheese binder until fully coated.
- Dredge each piece of chicken in the parmesan and pork rind mixture, pressing firmly to ensure the 'velcro' effect for a solid crust.
- Place the bites in the air fryer basket in a single layer. Cook at 400°F (200°C) for 12 minutes, shaking halfway through, until the exterior is mahogany-colored and the internal temperature reaches 165°F.
