  • 1/2 cup finely grated parmesan cheese
  • 1/2 cup crushed pork rinds
  • 1/4 tsp black pepper
  • 1/2 tsp dried parsley

Instructions:

  1. Whisk the large egg into the blended cottage cheese until fully incorporated and smooth.
  2. Stir the garlic powder, onion powder, smoked paprika, and sea salt into the cottage cheese mixture to create the protein binder.
  3. In a separate shallow dredging bowl, combine the finely grated parmesan cheese, crushed pork rinds, black pepper, and dried parsley.
  4. Toss the chicken breast cubes in the cottage cheese binder until fully coated.
  5. Dredge each piece of chicken in the parmesan and pork rind mixture, pressing firmly to ensure the 'velcro' effect for a solid crust.
  6. Place the bites in the air fryer basket in a single layer. Cook at 400°F (200°C) for 12 minutes, shaking halfway through, until the exterior is mahogany-colored and the internal temperature reaches 165°F.
