Ingredients:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1/2 tsp fine sea salt
- 1/4 tsp freshly cracked black pepper
- 1 pinch nutmeg, freshly grated
- 1.5 cups whole milk
- 16 oz frozen sweet petite peas
- 1 tsp lemon juice (optional)
Instructions:
- Melt the butter in a medium saucepan over medium low heat until it begins to foam and sizzle.
- Add the flour to the melted butter. Stir the mixture constantly for 2 minutes until it smells slightly nutty and looks like pale sand.
- Slowly pour in the whole milk, about a quarter cup at a time. Whisk vigorously after each addition of milk until the mixture is completely smooth and lump free.
- Raise the heat to medium and stir occasionally until the sauce thickens enough to coat the back of a spoon.
- Stir in fine sea salt, black pepper, and nutmeg.
- Fold in frozen sweet petite peas directly from the freezer.
- Cook for 3 to 5 minutes until the peas are tender and the sauce is bubbling.
- Remove from heat and stir in lemon juice if using.
