Ingredients:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper
  • 1 pinch nutmeg, freshly grated
  • 1.5 cups whole milk
  • 16 oz frozen sweet petite peas
  • 1 tsp lemon juice (optional)

Instructions:

  1. Melt the butter in a medium saucepan over medium low heat until it begins to foam and sizzle.
  2. Add the flour to the melted butter. Stir the mixture constantly for 2 minutes until it smells slightly nutty and looks like pale sand.
  3. Slowly pour in the whole milk, about a quarter cup at a time. Whisk vigorously after each addition of milk until the mixture is completely smooth and lump free.
  4. Raise the heat to medium and stir occasionally until the sauce thickens enough to coat the back of a spoon.
  5. Stir in fine sea salt, black pepper, and nutmeg.
  6. Fold in frozen sweet petite peas directly from the freezer.
  7. Cook for 3 to 5 minutes until the peas are tender and the sauce is bubbling.
  8. Remove from heat and stir in lemon juice if using.
