Ingredients:
- 170g cracked wheat or mixed cracked grains
- 240ml boiling water
- 375g high protein bread flour
- 120ml warm water (105°F/40°C)
- 42g honey or molasses
- 7g active dry yeast
- 9g fine sea salt
- 28g extra virgin olive oil
Instructions:
- In a small heat-proof bowl, combine the 170g cracked grains and 240ml boiling water. Cover and let sit for 1 hour 30 mins until grains are soft. Drain any excess liquid.
- In a large mixing bowl, combine 120ml warm water, 42g honey, and 7g active dry yeast. Let sit for 5-10 minutes until foamy.
- Add the softened grains, 28g olive oil, and 9g salt to the yeast mixture. Gradually stir in 375g bread flour.
- Knead the dough for 8-10 minutes by hand or mixer until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot until doubled (about 1 hour 30 mins).
- Gently punch down the dough and shape into a loaf. Place in a 9x5 inch loaf pan. Cover and let rise again for 45-60 minutes.
- Preheat oven to 375°F (190°C). Bake for 35 minutes or until the internal temperature reaches 190°F and the crust is mahogany-colored.
