Ingredients:

  • 1 lb frozen green beans
  • 1 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic, freshly minced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 tbsp fresh lemon juice

Instructions:

  1. Place a large cast iron skillet or heavy-bottomed sauté pan over medium-high heat. Add the olive oil and wait until it shimmers and begins to wisps a tiny bit of smoke.
  2. Carefully pour the frozen green beans directly into the hot oil. Do not thaw them first. Cook 5 minutes until the ice has evaporated and the beans are bright green.
  3. Push the beans to the edges of the pan, making a small hole in the center.
  4. Reduce heat to medium. Add the unsalted butter, minced garlic, red pepper flakes to the center of the pan.
  5. Sizzle 1 minute until the garlic is fragrant and pale gold.
  6. Use your tongs to pull the beans into the center, coating them thoroughly in the garlic butter.
  7. Sprinkle sea salt and black pepper over the beans.
  8. Continue cooking for another 3-4 minutes, tossing occasionally. Cook until you see brown, charred spots appearing on the bean skins.
  9. Remove from heat and drizzle with fresh lemon juice before serving immediately.
