Ingredients:

  • 1 lb fresh strawberries (approx. 15 large berries)
  • 8 oz high-quality semi-sweet or dark chocolate (60% cacao), chopped
  • 1 tsp refined coconut oil
  • 2 oz white chocolate

Instructions:

  1. Wash strawberries in cold water. Pat dry with paper towels, then let them air dry on a fresh towel for at least 20 minutes until the skin feels matte and tack free.
  2. Combine chopped dark chocolate and coconut oil in a microwave-safe glass bowl. Heat in 20-second intervals, stirring between each, until 90% melted. Stir until completely smooth.
  3. Hold a strawberry by the stem or hull. Dip into the melted chocolate, twirling as you lift it out to break surface tension and prevent chocolate pooling.
  4. Place the dipped strawberry on a parchment-lined baking sheet. Repeat with all berries.
  5. Melt the white chocolate and drizzle over the set dark chocolate shells for decoration.
  6. Place the tray in the fridge for 20 mins until the chocolate is firm and makes a clink sound when tapped.
