Ingredients:
- 1 lb fresh strawberries (approx. 15 large berries)
- 8 oz high-quality semi-sweet or dark chocolate (60% cacao), chopped
- 1 tsp refined coconut oil
- 2 oz white chocolate
Instructions:
- Wash strawberries in cold water. Pat dry with paper towels, then let them air dry on a fresh towel for at least 20 minutes until the skin feels matte and tack free.
- Combine chopped dark chocolate and coconut oil in a microwave-safe glass bowl. Heat in 20-second intervals, stirring between each, until 90% melted. Stir until completely smooth.
- Hold a strawberry by the stem or hull. Dip into the melted chocolate, twirling as you lift it out to break surface tension and prevent chocolate pooling.
- Place the dipped strawberry on a parchment-lined baking sheet. Repeat with all berries.
- Melt the white chocolate and drizzle over the set dark chocolate shells for decoration.
- Place the tray in the fridge for 20 mins until the chocolate is firm and makes a clink sound when tapped.
