Ingredients:

  • 2 cups unfiltered apple cider
  • 1 tsp lemon juice
  • 1/4 tsp ground cinnamon
  • 2 tbsp maple syrup
  • 1 tbsp salted butter
  • 1 tbsp heavy cream
  • 1/4 tsp vanilla extract
  • 0.5g sea salt

Instructions:

  1. Pour the apple cider into the saucepan over medium heat.
  2. Bring to a gentle simmer for 5–7 minutes until the liquid has reduced by about one-third.
  3. Stir in the lemon juice and cinnamon.
  4. In a separate small pan, melt the butter and maple syrup over low heat.
  5. Whisk constantly for 2 minutes until the mixture is glossy and integrated.
  6. Stir in the cream, vanilla, and sea salt until the sauce is velvety.
  7. Slowly pour the caramel infusion into the warm cider.
  8. Use a handheld frother or whisk for 10 seconds to emulsify the fats into the cider, creating a light foam on top.
