Ingredients:
- 2 cups unfiltered apple cider
- 1 tsp lemon juice
- 1/4 tsp ground cinnamon
- 2 tbsp maple syrup
- 1 tbsp salted butter
- 1 tbsp heavy cream
- 1/4 tsp vanilla extract
- 0.5g sea salt
Instructions:
- Pour the apple cider into the saucepan over medium heat.
- Bring to a gentle simmer for 5–7 minutes until the liquid has reduced by about one-third.
- Stir in the lemon juice and cinnamon.
- In a separate small pan, melt the butter and maple syrup over low heat.
- Whisk constantly for 2 minutes until the mixture is glossy and integrated.
- Stir in the cream, vanilla, and sea salt until the sauce is velvety.
- Slowly pour the caramel infusion into the warm cider.
- Use a handheld frother or whisk for 10 seconds to emulsify the fats into the cider, creating a light foam on top.
