Ingredients:
- 2 cups (240g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- ¾ cup (150g) coconut sugar
- 1 cup (240ml) fresh cantaloupe purée
- 2 large eggs
- ⅓ cup (80ml) coconut oil
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) fresh lemon juice
- ½ cup (60g) powdered sugar
- 1 tbsp (15ml) honey
- 2 tsp (10ml) milk
Instructions:
- Place cubed, seedless cantaloupe into a blender or food processor and pulse until completely smooth. Measure out exactly 1 cup (240ml) of the purée.
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a separate vessel, beat the eggs with the coconut sugar until pale, then stir in the cantaloupe purée, coconut oil, vanilla extract, and lemon juice.
- Fold the dry ingredients into the wet ingredients until just combined, ensuring no flour streaks remain.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes before transferring to a wire rack.
- Whisk together powdered sugar, honey, and milk, then drizzle the glaze over the warm cake.
