Ingredients:
- 1 cup (225g) unsalted butter, high-quality European style
- 4 tablespoons (40g) fresh garlic, finely minced
- 2 tablespoons white onion, grated
- 2 tablespoons (14g) low-sodium Cajun seasoning
- 1 tablespoon (7g) smoked paprika
- 1 teaspoon (2g) onion powder
- 1 teaspoon (2g) dried oregano
- 1/2 teaspoon (1g) cayenne pepper
- 1 tablespoon (15g) brown sugar
- 1 tablespoon (15ml) fresh lemon juice
- 1 tablespoon (15ml) Worcestershire sauce
- 1 tablespoon (4g) fresh parsley, finely chopped
Instructions:
- Place a heavy-bottomed saucepan over medium-low heat. Melt 2 tablespoons of the butter.
- Add the minced garlic and grated onion to the pan. Sauté for 2–3 minutes until the onion is translucent and the garlic is fragrant, ensuring it does not brown or burn.
- Add the remaining butter to the pan. Once melted, stir in the Cajun seasoning, smoked paprika, onion powder, dried oregano, cayenne pepper, and brown sugar.
- Whisk the mixture for 60 seconds over low heat to release the fat-soluble flavors from the spices.
- Whisk in the lemon juice and Worcestershire sauce. Continue whisking steadily to create a smooth, velvety emulsion.
- Remove from heat and stir in the freshly chopped parsley. Serve warm over seafood or as a dipping sauce.
