Ingredients:

  • 2 lbs (907g) cooked chicken breast, diced or shredded
  • 6 slices (60g) crispy bacon, crumbled
  • 1 cup (150g) cherry tomatoes, quartered and seeded
  • 1 medium (150g) ripe avocado, diced
  • 3 stalks (45g) green onions, thinly sliced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/2 cup (120g) plain Greek yogurt
  • 2 tbsp (30g) avocado oil mayonnaise
  • 1 tbsp (15ml) fresh lime juice
  • 1/2 tsp (3g) garlic powder
  • salt
  • black pepper

Instructions:

  1. Dice the cooked chicken breast into uniform 1/2-inch cubes and combine with crumbled bacon in a large mixing bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, avocado oil mayonnaise, lime juice, and garlic powder until the mixture is smooth and glossy.
  3. Pour the dressing over the chicken and bacon, stirring until every piece is thoroughly coated.
  4. Gently fold in the seeded cherry tomatoes, sliced green onions, and chopped parsley.
  5. Fold in the diced avocado last to ensure it remains intact and does not break down into the salad.
