Ingredients:
- 6 cups (900g) seedless watermelon, cubed into 1-inch pieces
- 2 cups (300g) Persian cucumbers, diced
- 1/2 cup (75g) red onion, very thinly sliced
- 1/2 cup (50g) feta cheese, crumbled
- 1/4 cup (10g) fresh mint leaves, torn
- 2 tbsp (30ml) fresh lime juice
- 1 tbsp (15ml) extra virgin olive oil
- 1/4 tsp (1.5g) sea salt
- 1/8 tsp (0.5g) cracked black pepper
Instructions:
- Dice the watermelon and cucumbers into uniform cubes. Slice the red onion into paper-thin half-moons; if the onion is too sharp, soak the slices in ice water for 5 minutes and pat dry to mellow the flavor.
- In a small jar or bowl, whisk together the lime juice, olive oil, salt, and pepper vigorously until the mixture is opaque and combined.
- Place the watermelon, cucumbers, and red onion in a large bowl. Drizzle the dressing over the top and toss gently with a spoon.
- Carefully fold in the crumbled feta and torn mint leaves at the very end to prevent the cheese from breaking down.
