Ingredients:

  • 6 cups (900g) seedless watermelon, cubed into 1-inch pieces
  • 2 cups (300g) Persian cucumbers, diced
  • 1/2 cup (75g) red onion, very thinly sliced
  • 1/2 cup (50g) feta cheese, crumbled
  • 1/4 cup (10g) fresh mint leaves, torn
  • 2 tbsp (30ml) fresh lime juice
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/4 tsp (1.5g) sea salt
  • 1/8 tsp (0.5g) cracked black pepper

Instructions:

  1. Dice the watermelon and cucumbers into uniform cubes. Slice the red onion into paper-thin half-moons; if the onion is too sharp, soak the slices in ice water for 5 minutes and pat dry to mellow the flavor.
  2. In a small jar or bowl, whisk together the lime juice, olive oil, salt, and pepper vigorously until the mixture is opaque and combined.
  3. Place the watermelon, cucumbers, and red onion in a large bowl. Drizzle the dressing over the top and toss gently with a spoon.
  4. Carefully fold in the crumbled feta and torn mint leaves at the very end to prevent the cheese from breaking down.
