Ingredients:
- 1 lb ground beef (80% lean / 20% fat ratio)
- 2 tbsp ice-cold water
- 1.5 tsp Kosher salt
- 2 tsp whole fennel seeds
- 1 tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 0.5 tsp smoked paprika
- 0.5 tsp red pepper flakes
Instructions:
- Place whole fennel seeds in a dry skillet over medium heat. Toast for 1 minute until fragrant. Coarsely crush using a mortar and pestle.
- In a small bowl, combine the crushed fennel with salt, black pepper, garlic powder, onion powder, oregano, paprika, and red pepper flakes.
- Place chilled ground beef in a cold mixing bowl. Add the spice blend and ice-cold water. Mix for 2 minutes using a stand mixer paddle or cold hands until the meat becomes tacky and sticky.
- Cover and refrigerate the mixture for at least 30 minutes to allow the flavors to meld and the proteins to bind.
- Form the meat into patties or crumbles. Heat a cast iron skillet over medium-high heat and sear until the internal temperature reaches 160°F (71°C).
