Ingredients:

  • 1 lb ground beef (80% lean / 20% fat ratio)
  • 2 tbsp ice-cold water
  • 1.5 tsp Kosher salt
  • 2 tsp whole fennel seeds
  • 1 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp red pepper flakes

Instructions:

  1. Place whole fennel seeds in a dry skillet over medium heat. Toast for 1 minute until fragrant. Coarsely crush using a mortar and pestle.
  2. In a small bowl, combine the crushed fennel with salt, black pepper, garlic powder, onion powder, oregano, paprika, and red pepper flakes.
  3. Place chilled ground beef in a cold mixing bowl. Add the spice blend and ice-cold water. Mix for 2 minutes using a stand mixer paddle or cold hands until the meat becomes tacky and sticky.
  4. Cover and refrigerate the mixture for at least 30 minutes to allow the flavors to meld and the proteins to bind.
  5. Form the meat into patties or crumbles. Heat a cast iron skillet over medium-high heat and sear until the internal temperature reaches 160°F (71°C).
